This is loosely based on a macrobiotic recipe. This makes about 1 1/2 cups, enough for ds and I.
grate 2 organic carrots - measure how much this is (you'll need to know later
)
finely chop 1/2 a small to medium onion
Add carrots and onion to pot. Add water equivalent to the amount of grated carrots (i.e., if you have 1 c grated carrots add 1 c water). Boil, cover, reduce heat and simmer for 30 min. Pour into blender, add 1 TB or so of miso paste, and process until smooth.
It is so creamy and rich tasting, and so simple. Ds *loves* it.
