Warm butternut squash and chickpea salad So good. But, because I don't follow recipes well
I threw the chickpeas in to roast with the squash a bit. The more roasty chickpeas made up for the slightly squishy squash - fresh squash would be better, texture-wise. I used parsley, because DH bought it instead of cilantro. However, my kids don't like cilantro, and they all inhaled this salad.
