Seriously the easiest thing ever.
Depending on the size of your family / crockpot:
1 lb. ground beef
1/2 jar of salsa
1 - 2 tbls. taco seasoning (I make my own but about 1/2 a package if you buy it that way)
or
2 lbs. ground beef
1 jar of salsa
2 - 4 tbls. taco seasoning
Cook and drain ground beef. Add to crockpot, stir in salsa and seasoning until blended. Cook on HIGH for 3 - 4 hours or LOW for 6 - 8 hours. Just make sure the crockpot is more than half full, especially if cooking on HIGH. Last night it was just three of us, I used a small crock but it was a little under half so I think it was 4 -5 hours on LOW. It's really hard to mess it up.
That's it. I'm sure you could easily double the 2 lb. version as well and I flash freeze leftovers in muffin tins, put in freezer bags and if you just want one or two tacos, grab one of the frozen "muffins" and defrost. Excellent for always hungry teens.
