Can you help me make this recipe healthier?
So I took a recipe that's not vegetarian and will make it vegetarian, but I'd like to know if I can add something to it to make it more packed with nutrients and more a filling meal. Here's my modified version of the recipe:
1 lb broccoli rabe, cut into 2 inches pieces
8oz uncooked fiori or fusilli pasta
2 tbsp evoo
4 garlic cloves, thinly sliced (I would probably double this)
1 leek, rinsed and sliced into half moons
8 oz meat sub (I'd probably use "ch'kn cutlets or sietan), cut into 1 inch chunks
3/4 tsp salt
3/4 tsp fresh ground black pepper
1 cup veggie stock
1 tsp crushed red pepper (I'd omit this and add to my own bowl so the kids can eat it)
1/3 cup fresh gated pecorino Romano cheese
1 tbsp freshley chopped majoram
1. Bring a pot of water to a boil. Immerse broccoli rabe in water 1 min or until bright green. Remove with slotted spoon, place in a towerl to keep warm. Cover pot, bring water back to a boil.
2. Add pasta, and cook 12 mins or until al dente. meanwhile, heat a large nonstick skillet over med high heat add evoo, garlic, and leek. Cook 2-3 mins or until just golden brown. Season meat sub with 1/4 tsp salt and pepper each. Raise heat to high and add chicken. Cook 2-3 mins or until well browned. Add brocolli rabe, stock, red pepper and remaning salt and pepper. cook chicken and veggies 6 mins or until tender and lquid has reduced by half. drain pasta, transfer to dish. top with sauce, add cheese, and majoram and toos to combine.
