my breakfast/brunch today
I am trying to eat healthier - going more towards vegetarian/vegan.
So, I made a meal with some organic 8 grain cereal blend that I got at a Korean grocery store - it has organic thai brown rice, red rice, black rice, azuki bean, mung bean, pearled barley, oats, millet.
I rinsed it and soaked it overnight since it had the beans in it - I am not sure if you are supposed to soak rice - are you?
Anyway, I did, and then I rinsed it this morning and added water and a piece of kombu (I have heard it helps make the beans not give you gas) and cooked it for about an hour and a half. I ate some (about a half to 2/4 cup) this morning with some toasted sesame seed salt (I toasted sesame seeds and ground them with a little salt - it smelled kind of odd, but tasted ok) and some soy sauce - but I don't really like the low sodium soy sauce we have (kikomman) - I will look for some other kind.
Then, a little while ago I ate some again - about 1/3 to 1/2 cup with an over easy fried egg and some fresh mushrooms - just fried them in the olive oil/earth balance that I cooked the egg in and put in a tiny splash of mirin in it to brown it and ate it all together and it was yummy!
