I have chicken in the crock pot with
1/2 can coconut milk
1/2 c honey
1/2 c mustard
2 t curry powder
1 t salt

I've broken it up now that it's almost ready to soak up more deliciousness, and I'll serve it over rice with sautéed green beans.

This sounds delicious! I'm always looking for new chicken/beef dishes to serve over rice. My kids LOVE rice but also I find dishes like this stretch the meat so far, which of course I love.

How did it turn out?

Last night's dinner (more evidence that I do indeed love saucy chicken meals over rice ) was balsamic honey chicken, over rice (or zucchini) with broccoli.
