We like this veggie beef soup. It makes a huge pot but you can half (or quarter

) it easily

VEGGIE BEEF SOUP
2 lbs stew meat
1 1/2 c. chopped onions
29 oz tomato sauce
4 cans stewed tomatoes
8 lbs frozen mixed veggies
1/2 c. parsley flakes
8 c. water, more or less to desired consistency

Brown meat and saute onions. Combine all ingredients in a large pot. Bring to a boil. Reduce heat and simmer.
