Spinach/cucumber/strawberry/feta salad with balsamic.
DH likes a spinach salad with tomatoes, bacon (I know, I know!), a little cheddar and broccoli. SOmetimes sliced button mushrooms.
Green smoothies, just the basic greens + banana + water.
Kale cooked down a bit and served with beans and quinoa. Probably any green, but I like kale for this.
The plate of hummus and handfuls of different veggies is still popular with DS.
Oh, and if you like fish: Take your favorite white fish and place it, raw and thawed, on a baking pan full of spinach. Throw some whole cherry tomatoes on if you have them. Dot with butter, salt/pepper/garlic powder. Squeeze a lemon over the whole thing, cover with foil, and pop in the oven at 350 for thirty minutes/until the fish flakes. Serve over rice. Super yum.
