These are ovo-lacto, but most of the ingredients could be subbed for a comparable soy product
White Wine Pasta!
Easy peasy, and really yummy. Seriously, it tastes impressive.
1 lg can crush tom
3/4 C white wine
3 TB olive oil
1-2 cloves crushed garlic
1 bunch fresh basil (the fresh really makes it
)
1/3 C cream
2 boxes penne
-pour several Tablespoons of olive oil in a pan, add fresh minced/crushed garlic until garlic start to look golden
-add 3/4 C white cooking wine, simmer 3 min.
-add can crushed tomatoes, bunch of fresh chopped basil, salt and pepper to taste
-add 1/3 C cream just before combining with 2 boxes of penne cooked to al dente and drained well
Serve with garlic bread...yum!!
Also, this recipe for Shepherd's Pie..modified with veggie crumbles instead of lamb/beef. We had dinner with leftovers, and it cost maybe $6 for the entire meal.
