Re: Silicone baking mats vs parchment paper
The Costco ones look like a French knock-off of Silpat, which is also a French brand, I believe. At a fraction of the price, I'm tempted to get a set to try them out.
I totally agree that quality varies from brand to brand. I've had pans and liners that stink, stick, and hold onto smells and tastes. My Silpat is fantastic as is a gray tube pan I bought 15 years ago. (I have no idea what brand it is!) I love the muffin liners (The Boston Sweets) I bought on Amazon 2 years ago, but the rolling pin and mat mil bought me last year for Christmas got donated to the kid kitchen pretty quickly. The larger loaf pans, the Tupperware baking mat, another pan, all saw more use in the sandbox and the craft projects than kitchen. I bought a pan from Target (Trudeau Maison) for a friend that has a rigid frame so that it doesn't collapse and she really likes it.
