I made a nice cheesy baked pasta dish with lots of veggies...spinach, shredded zucchini, and carrots.

The same authors also wrote "Gluten Free Artisan Bread." I borrowed it from our library.
I made up a dish that everyone loved. I roasted 2 spaghetti squash. Made a roux with butter and flour. Added milk, salt, garlic, nutmeg, red pepper flakes, and grated mozzarella (because I had a lot leftover from making pizza). Added leftover diced chicken. It would've been even better with spicy sausage but chicken was what I had. Everyone loved it.
Tonight we're having clam chowder and homemade bread.
