I work every night this week, so I've got a bunch of crock pot meals planned. Tonight is Cheesy chicken (from the THM Cookbook) that my kids make into nachos with red pepper, radishes, carrots, and cucumber.
So simple - puree 2 packages of cream cheese (we use Neufchatel) with 1/2 cup of chicken broth and some spices in the blender, pour over 2-2 1/2 pound of chicken breast in the crock pot. Let it go all day (8-10 hours) on low or 6 hours on high and it shreds into creamy, cheesy yumminess.
The recipe calls for Cajun seasoning, but I've never found one I liked, so I make my own blend with smoked paprika and some other spices. It's a good base for loads of different flavors. It even works with frozen spinach tossed in. My kids get a little persnickety about one-pot meals, though so I have to restrain myself from TOO much experimenting.
