this is the best one I've ever made, but I've only made it 2-3 times. I have to make it again soon...), split pea is great. I love soup because I can use whatever veggies I have on hand for a "Vegetable Soup"... if I don't have potato I usually add quinoa or pasta to make it a meal.

Oh my Italian family also makes a simple broth (probably chicken) with just tortellini in it. Another variation has a couple of rice balls floating in the broth instead. My family's recipe isn't breaded like
this one, it is kind of just eggs, rice and cheese formed into a ball and fried till crunchy
