Carrot Ginger Soup
Thought I'd post the recipe that I used for tomorrow's soup. It's yummy!
2 tbsp olive oil
1 pound of carrots, peeled and chopped
1 large onion, peeled and chopped
1 (2 inch) piece of fresh ginger, peeled and finely chopped
1/2 tsp fresh thyme leaves
3 cups vegetable broth (or chicken)
1 can light coconut milk
1 tsp curry powder
2 tsp honey
I sauteed the carrots, onions, and ginger until soft, then added all the ingredients but the coconut milk. After simmering about 25 minutes, I pureed the soup, stirred in the coconut milk and honey.
