Dh and I fantasize about how easy the meals are going to be once the kids are out on their own.
Mexican Rice
Olive oil
2 cups basmati rice
Season with salt, pepper, granulated garlic, granulated onion, and cumin
Saute these together until the rice smells nutty and the cumin is fragrant.
Then add:
4 cups chicken broth
1 can rotel (tomatoes and peppers)
Cover and bring to a boil, turn down to a simmer and cook for 15 mins. Stir and serve.
Cilantro and Lime Black Beans
1 can black beans, undrained
Season to taste with salt, pepper, granulated garlic, granulated onion, chili powder and cumin.
Bring to a simmer.
Add:
Juice of three limes
A bunch of chopped cilantro
Heat through and serve.
The rice and beans mixed together are really good, too.
