Of course I read this thing in January. I could cry for the lack of grilled eggplant.
My DH made these kabobs to die for... red onion, portabello, eggplant (if you've never grilled eggplant, you must!), garlic and red bell pepper. Marinated them a little in a red wine/teriyaki sauce and they were possibly the best thing I have ever had. Just remember to soak your wooden skewers well before putting them over flame.
When I get muttered at tongiht for making DH fire up the grill, it is all your fault. Yours, d'you hear?!
