Dh did go to the grocery store this am and I had him pick up a bunch of veggies and chicken and have a fully stocked pantry so will be able to cobble a few easy things together for the next few days. Pasta, Mexican dishes, sandwiches, salads. The usual.

I am inspired by this thread too. I have tried several new, yummy dishes because of it.
I had soup and salad last night.
Tonight we had red sauce enchiladas. So easy.
Into blender
1 cup broth
3 eggs,
I package of laughing cow cheese, spicy or not
1 6 oz can of tomato paste
salt
onion powder
cumin
paprika
garlic powder
maybe 1 tbsp of some and 2 tsp of the others
I make up recipes like this, so I don't measure
tortillas (3 tortalls in each layer for a total of 6)
cooked chicken in between the tortillas
cover each layer with the blended sauce
