DH is trying to diet so I'm trying to support him with my meals. Tonight I made these
Cauliflower Rice Balls (Arancini) and they were SOOO good! Both DH and DS said they were a 10 out of 10 for diet food, but still an 8 out of 10 for regular food (he said he had to leave room on the scale for all the steak and bacon in the world
). They were a little bit high maintenance to make, but I'll definitely do it again because they were so yummy. I tripled the recipe for my family of 5.
