Cook them twice. That's how "real" fries are done. They're parboiled (boiled briefly for a few minutes) at the factory, frozen and shipped out. Restaurants pop them in the fryer for 2 minutes to crisp them and sell them.
When I was using pre-made frozen, I'd spray cooking oil over them spread out single layer on a baking sheet and stick them under the broiler for a few minutes. Nice and crispy.
Now, with home cut and made, I toss them with oil and either bake for 20 minutes at 400*, or broil them. Still tweaking that recipe.
