you ladies are so quiet.

What have you been eating?

We got some cooler weather for a few days...so I broke out the potato soup.

saute veggies like onion, garlic, celery, red pepper etc.
Chop potatoes and add to the pot.
Cover with a can or two of coconut milk.
top it off with enough broth or water to cover potatoes
Boil till it softens those potatoes

I like to add green chilies and corn, too.
