I made this one pot chicken stew and used bone in chicken thighs with skin and pulled meat off the bones after I added potatoes. DD LOVES soup and DH also loves this dish. I will definitely make again as it was easy and cheap and very tasty.

I think it would also be very good if you subbed rice for potatoes. DH doesn’t like rice in soup sadly (I also made a double batch of this and am taking one to our pastor and his family, his wife just had baby #5. I am taking it with a salad of mixed greens, sliced almonds, sliced apples, and raspberry vinaigrette, along with 2 loves of French bread from Costco. Also, fruit salsa with cinnamon chips which is a tradition in my family, started by my sister and I, when someone has a baby— 2 golden delicious apples, peeled and chopped, 4 kiwis chopped, package strawberries diced, package of raspberries, 2 tablespoons strawberry jam, 2 Tablespoons each white and brown sugar, less depending on your taste. It is divine)
