I totally know what you mean! I had never made them before...just looking for a fun new thing to do with sweet potatoes. It made them kind of crusty on the outside which my family really liked. Definitely don't need to put them back in the oven, except for the fact that they had a raw egg in them before the 2nd bake....but they were pretty!
