Wow. I came back to look at this and I'm a little astounded at how far I've come.
My meals right now typically consist of:
pinto beans cooked with bell pepper and onion and served with crackers or tortillas
veggie fajitas
buddha bowls (from Crazy, Sexy Diet)
veggie fried rice
Veggies and dumplin's (using my grandma's chicken n dumplin's recipe, but subbing veggies for the chicken and hemp milk for the milk)
Big salads (they're better with avocado
)
I'm still doing pizza and spaghetti, but it's vegan now. Also, if everyone else is having meat, I'll have the sides and open a can of vegan baked beans. Occassionally I have a noodle cup or can of soup, but that's pretty rare.
L-boogie, could you share the recipe for your mexican style casserole?
