This is the way we eat when all my kids are here for dinner! The vegetarian part is relatively new since my 19 yo decided to try it. I'm going to use some of these ideas for myself.
I've found that I can take some of my favorite recipes and leave out the meat, adding extra veggies for bulk and flavor and sometimes lentils or chick peas for protein. (Roasted chick peas on top of a salad instead of chicken, yum!). Here's a good shepherd's pie recipe.
