I'm not vegan, but my family recipe for cornbread dressing might be easier to make vegan - no cream of soup and I know you can buy veggie broth - seen it at the grocery store right by the chicken. I'll give you our recipe, w/ changes that you could make:
1 pan cornbread (better if its a couple of days old)
7 or 8 biscuits or slices of dry bread crumbled
2-3 boiled eggs, chopped (it should be find to omit this - you hardly notice them)
chopped celery, to taste (maybe 4-5 stalks)
1 chopped onion
5-6 cans chicken broth (use the veggie broth instead)
2 TBSP sage
2 TBSP poultry seasoning
salt and pepper to taste
mix all together in a big pan. if it looks dry add more broth. Let sit overnight then bake at 400 for 1-2 hours.
I'm a little approximate on things b/c this is grandmas recipe and it's not actually written anywhere. If it's for a crowd use 2 pans of cornbread so there'll be leftovers. Not sure how many you are having.
