I found a year ago that I'm allegic to eggs (among other things)..I have experimented with alot of replacement methods. For cookie & cornbread recipes, I use 1 tsp cornstarch mixed with 1/4 c. applesauce per egg...
I also bought "Bakin Without Eggs"..it has a few better for you versions of comfort foods (like banana bread) too
