Bone in are our favorite. They're more of a pain to eat but often more flavorful/tender. Plus then you can use the bones for stock

DH always grills them. He is a MASTER porkchop griller...to the point that one time we had them when my parents were here and my poor dad got shamed by my mom for how much better DH's porkchops are
