Gentle Christian Mothers Community - View Single Post - What to do with a LOT of sour cream

My mum makes the most amazing potato salad with sour cream.

Cook diced potatoes until just tender allow to almost cool.
Fry diced bacon until crispy.
Chop some hard boiled eggs (optional)
Finely chop some chives.

Mix all together with sour cream. Top with more chopped chives and refrigerate until serving time.

Delicious.
