Oh wow, I got behind again in posting.
Monday we had mediterranean pasta, but I added several veggies that I needed to use up (bell peppers, shallots, zucchini) and Greek salad
Tuesday -
Tator Tot Crust Taco Pizza, lettuce salad with homemade ranch - I do feel a little bad about this meal because it is made from a ton of processed foods, but it sure did hit the spot that day
Wednesday - Crockpot bbq chicken, crockpot cheesy potatoes, baked beans, coleslaw
Thursday - Tempura battered tilapia, tempura onions and zucchini, homemade chinese hot mustard, baked sweet potatoes, arugula and spinach salad with lemon vinaigrette. The tempura didn't work very well, but I did eat a whole piece of fish (for those of you following my seafood thread saga)
