I slice them really thin, about the length of my pointer finger and about as thin as a pencil and sautee them in butter, olive oil, canola oil, somethign like that and then at the very end I add a tablespoon of brown sugar and a dash of ginger to the pan and make a glaze ( really thin almost the consistency of vinegarette dressing) and toss the carrots in it. The kids love them. I also cut carrot coins for the kids (my kids are older than yours I think) and sprinkle with dry ranch dressing ( comes in a packet. I put some in a salt and pepper shaker) and they eat it plain like that. I use that ranch dressing seasoning for lots of veggies, pastas and such. That way I get all the flavor, no dairy and less calories.
