I have an amazing recipe...it is NOT healthy, but it is the only sugar that is EVER allowed in the house, so I don't feel bad about this every once in a while:
2-3 lb. chicken thighs (boneless preferred)
brown sugar
butter
oil
16 oz. sliced mushrooms
3-4 onions, halved and sliced
Place chicken in 9x13 glass dish - salt and pepper
IN large skillet, melt about 2/3 -3/4 stick butter (told you it wasn't the healthiest) with about 1/4 cup oil.
Saute' onions and mushrooms until very soft.
Stir in about 1 cu. brown sugar until dissolved
Pour all over chicken
Cover tightly with foil and cook ~3 hours at 325F.
Uncover and cook ~10-15 minutes...until sauce starts to caramelize
We typically serve with roasted or mashed potatoes and either roasted asparagus or a salad (mesclun greens, cranberries, feta, walnuts, and balsamic vinaigrette).
