It's what the recipe calls for and I used the one in my set that's smaller than the 9x13 big cake pan...so probably more 8x11 than 10x6, but the Bar Police haven't caught me yet

I think lemon would be good if you like lemon cheesecake - they come out sorta cheesecakeish.
There are varying views of lid-licking and pie-filling-finishing-off...I'll leave that to your own theological upbringing and conscience
