I've found that I can take some of my favorite recipes and leave out the meat, adding extra veggies for bulk and flavor and sometimes lentils or chick peas for protein. Thank you for the link to the recipe. I passed it on to my daughter that is supposed to avoid meat.
I basically use 5 eggs and add spinach and cheddar with the 1/2 cup of gf bisquick to make a quick quiche.
Since my energy is so low, I add a little extra milk to say a pumpkin pie recipe and throw in 1/2 cup of the gf bisquick and that is how I make the pumpkin pies for my husband. I would think it would work fairly well with any custard type pie recipe.
