Curry Lentils With Chicken
2 cups lentils
3 cups water
2 chicken breasts, cubed
2 chicken bouillon cubes
1 onion, minced
3 garlic cloves, minced
1 (15 ounce) can diced tomatoes with juice or fresh tomatoes, equivalent
2 teaspoons curry powder
1/2 teaspoon cumin
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
1/2 teaspoon ground coriander
1/2 teaspoon ginger
2 tablespoons apple cider vinegar
1/2 cup cilantro, chopped
salt and pepper
1. Put all ingredients but the cilantro in the crock pot. If you want your chicken in a 'shredded' like consistency, put it in now, if you want it less done, add about 1.5 hours before you want to eat it in chunks.
2. Leave to cook overnight or start in the morning for dinner.
3. Taste to season with salt and pepper and add fresh cilantro.
4. stir and enjoy.
5. Can be eaten alone or with rice.
I used apple cider vinegar, and the flavor seemed a bit strong. I used 2 cups chicken broth, 1 cup water and omitted the broth powder. I cut the chicken into slices and added it at the beginning. I also forgot to add the cilantro, after I went out and bought some especially for this recipe
I served it over rice.
