We love crustless quiche we grate up 2-3 carrots 1-2 potatoes and beat up dozen eggs add 1T sea salt 1 T Rosemary a bit of black pepper (1/2tsp.) mix it all together in a greased large casserole dish (9x13? Or one size bigger probably I can't remember the measurement
) and bake at 365 for 45minutes or until edges are golden brown.
Some times we add onions and sweet potatoes...some times we add peppers and onions and zucchini with the potatoes (squeeze/drain the zucchini!!)
Very versatile and we usually have it a few mornings a week for breakfast (1 breakfast for the 5 of us, and then some times a snack or the next day's breakfast for Dh and I).
