I know you're not vegetarian, but most people I've talked to are surprised to learn there are tons of non-meat (and healthful!!!) slow cooker recipes.
My favorite cookbook is
Fresh From the Vegetarian Slow Cooker. I can't think of a single gravy recipe
instead there are things like potpies, pastas, polenta, curry, paella, risotto, dal, Hungarian Goulash, Moroccan stew, sloppy joes, etc. With a couple exceptions, every recipe uses normal pantry ingredients.
