Anyone have any scone recipes they like?

Vegan Orange Scones
Wet:
1/2 cup soy cream (just use milk if you don't have it)
3/4 cup rice or soy milk (or nut milk whatever you like. You need at least some soy cream if you use rice milk because you are going to make buttermilk with the vinegar.)
1 TBSP apple cider vinegar
Mix together and let sit. It will get all thick like buttermilk. This helps them rise.
Dry:
3 cups flour
1/3 cup sugar
2 TBSP baking powder
1/4 tsp salt
1/3 cup veggie oil
3 TBSP orange zest (I use fresh!)
Mix all together in a big bowl. Add the wet stuff and mix together gently.
Divide dough in half and knead lightly. Make into a 6 inch circle and cut into 6 triangles, like a pizza. Do the same with the second half of dough. Put scones on a lightly greased cookie sheet and bake for 12-15 minutes at 400F. These puff up a lot!!
After they are cool you can glaze them if you want. Don't store them in a tight container or the glaze gets wet and sticky from the moisture. They taste better if you eat them they day or next day you make them.
1 cup powdered sugar
2 TBSP melted Earth Balance
2 TBSP fresh orange juice
1 tsp fresh orange zest
Stir together until there are no lumps and drizzle all over your scones. There will be plenty to coat the entire tops.
Eat these with tea or coffee and feel really, really special and fancy
