My best advice is, don't look for to make veg/vegan versions of meat meals - you'll almost always be disappointed by anything that someone touts as "just like" something...it never is. Explore flavors and meals that good on their own merits.

Good advice. I love vegetarian / vegan eating and wouldn't miss the meat most of the time. My dh, he would. So he can keep eating his favorite meat dishes and these will just be new, different flavors and a more wide variety of veg. We love ethnic food so that should help.
