I tried the bean-oat waffles and we all loved them and will be making them again.
Someone who is used to a more typical waffle might want a little more sweetener. I used cooked white beans.
I don't know about the waffle iron. I had terrible sticking problems with every recipe and everything I tried, with my last iron. I finally gave up and bought a new one, just an inexpensive one from Target. It has worked great for us. A couple of years ago we were gluten free for a short time, and I know we made waffles and pancakes with GF mixes. It could just be your iron.
