I made such yummy food tonight!

I changed the recipes some when I made them because I have a tough time actually following recipes exactly because what if they have ingredients in them that I don't have or don't want to use? Or, what if I have stuff that would be good in the recipe?
So, I use what I have and improvise usually.
For the soup, I forgot the canned tomatos - and it was good anyway.
I did not put peppers in the cornbread - did not have any.
For the caprese salad - I used tomatos- one red and one yellow, sliced cucumber, marinated mozzarella balls, fresh basil leaves, fresh sliced mushrooms, some green cabbage sliced thin, and some sliced olives that were stuffed w/ garlic and jalapeno (from Costco - I love those things!) and salt and pepper, olive oil, balsamic vinegar, and brown rice vinegar.
We ate some tonight and the rest is marinating in the fridge until tomorrow. Yum!
