But the Breakfast section looks pretty empty!
Crockpot Pumpkin Oatmeal
Stir together 1 cup steel cut oats (or 1 1/3 cup for regular old-fashioned oats)
4 cups water
1/2 cup pumpkin puree (canned is fine!)
1/4 cup brown sugar
2 tsp cinnamon
1/2 tsp nutmeg
Cook overnight (8 - 10 hours for steel cut, 6 for regular) on low.
Serve with a handful of pecans and additional sugar if you'd like. Great source of fiber and Vitamin A!
