Baked Oatmeal
2 eggs, beaten
1 C milk

That is the recipe as published in my mennonite cookbook. How we actually make it is to sub applesauce for the oil, use only 2/3 C brown sugar, skip the salt, add a dash of nutmeg in with the first section of ingredients, and skip the raisins. So, adjust it to your liking and see how things go.

i like it without milk. you can add almost anything - fruit, nuts, etc. the other recipe she sent me is

Peanut Butter Baked Oatmeal
3 cups quick cooking oats

2 tablespoons butter, melted
2 eggs
2 teaspoons baking powder
3/4 teaspoon salt
2 teaspoons vanilla
1/2 cup peanut butter
extra milk for serving
Mix all ingredients together and stir well. Spread in a greased 9×13 pan. Bake at 350 for 20-25 minutes. If you like it a little crunchy on top cook for a few minutes longer. Serve with warm milk poured over top. Enjoy!
(i used regular oats and it worked fine)

would also be good with a few mini chocolate chips mixed in.
also, you can make in muffin tins instead of the big pan, for individual and/or on-the-go servings.
