Italian Chicken Pasta
cook tri color pasta, after it is cooked add in chopped red onion, can of corn, can of chicken & Italian dressing to taste (we usually add a little right away & then each person adds to their own plate). Can eat warm or cold
side dish usually is a green veg (mix vegs, green beans, maybe a spinach salad)
Chile Ole
1c chopped onion
2 cloves garlic
1 T veg oil
2 lbs ground beef
16 oz tomato sauce
2 cans rotel tomatoes (I usually use one can rotel & one can of diced tomatoes b/c 2 cans of rotel are just too spicey for me)
10 oz A1
16 oz can black beans
11 oz can corn
shredded cheese, sour cream, fritos
1. cook onions & garlic in oil until tender, add beef, cook until brown & drain
2. add all other ingredients *except* beans & corn. Heat to boil, reduce heat, cover & simmer 10 min
3. stir in beans & corn, heat uncovered 10 min
4. garnish with cheese, sour cream (I don't like sour cream, but dh does) & fritoes
great side dish: cornbread.
simple & not too expensive. It makes *a lot* of food, too. YUM!!!!
