Cheesy hashbrown casserole
1 bag of shredded frozen hashbrowns
1 can of cheddar cheese soup
1 container of sour cream
Shredded cheddar or mozzerella cheese (both are really good, mozz makes it creamier)
Diced cooked ham or chicken
Salt/pepper
Mix all of the ingredients in a big bowl and then lightly press into a greased casserole or cake pan. Bake at 350 for about 40-45 minutes. You can add a little cheese on top at the end of the baking time too. I also mix salt and pepper together and sprinkle on top.
Unstuffed chicken
This is an easier version of stuffed chicken although making the stuffed chicken probably takes less than 20 minutes also.
1 container chive and onion cream cheese
1 large onion diced
1/2 cup to a cup of chopped spinach drained (I use thawed frozen spinach)
Thin sliced chicken
2 sleeves of ritz crackers crushed
melted butter
Mix the first 3 ingredients and spread in a cake pan. Layer chicken on top, then sprinkle the ritz crackers thickly over the chicken. Drizzle melted butter all over the top and give it a few shakes of salt and pepper. Bake at 375 for 40-45 minutes.
If you want to do the stuffed version, just flatten chicken breasts, add the cream cheese mixture, roll it up, dip in melted butter, then in crackers. Bake at the same time and temp. YUM.
