I have to share this dish I made up.
Cut chicken breasts or tenders into bite sized pieces (mine were about an inch square)
Roll them in plain yogurt to coat; dip in seasoned flour; dip in beaten egg; dip in seasoned bread crumbs (I make my own using leftover, homemade, whole wheat bread). Your fingers will get messy.
Place on parchment paper covered cookie tray and drizzle with melted butter. Bake at 475 for 3 minutes; reduce heat to 350 and bake 10 minutes. Very crunchy and yummy!
I season my flour with salt, pepper, paprika, and onion powder. I season the bread crumbs the same way.
