Qualities of pumpkin -
- Good source of vitamins A and C
- High in potassium, manganese, copper and one of the B vitamins, riboflavin.
- Considerable amounts of magnesium, phosphorus, iron, folate, vitamins E and B6, niacin, thiamin and pantothenic acid
Do some googling, some cookbook searching and have fun with Pumpkin! Try to make it vegan or with a limited amount of dairy/egg. Because of it's inherent bitterness, most of the recipes I've seen have a good amount of sugar so don't be bashful.
