I'll try to come back this evening with actual recipes but I'd look for gf rice pasta and Veganaise (in the refrigerated section
of most hfs) and with those substitutions you can make a lot of things. Also, EnerG has a great Egg Replacer
I find that for most people knowing what to substitute with helps them use recipes they are familiar with and not feel too overwhelmed. If you make spaghetti just use a vegan sauce (get it in a jar even
) and the gf pasta.
Also, if she goes into a Whole Foods or Sprouts or Trader Joes (if she has one near her) they will be able to help her find things and know about the combo special diets
