This is a recipe my mom made about once a week and it's a family favorite.
Chicken Cacciatore
4-6 chicken breasts
4 garlic cloves, mashed
1/2 C olive oil
1/2 C butter
2 C finely chopped onion
1 green bell pepper, chopped
1/2 tsp. basil
1 C tomatoes, chopped
Salt and pepper
1/2 tsp. old bay seasoning
Saute chicken in butter/ oil for 10 min. until golden brown. Add onion, peppers, garlic, basil, and spices and simmer for 5 min. Add tomatoes. Bring to a boil. Reduce heat, cover and simmer for 20 min, stirring occasionally. Serve over rice.

Chicken Waikiki (family favorite)
1 frying chicken, cut up
1 can dole sliced pineapple (undrained)
1 C barbeque sauce (I use sweet baby rays teriyaki)
1 T cornstarch
1 t ginger
1/3 C oil
salt and pepper
Dip chicken in buttermilk and then dredge in flour which has been seasoned with salt and pepper. Brown on all sides in skillet. Drain excess oil but don't remove chicken. In a separate bowl, combine cornstarch, ginger, barbecque sauce, and pineapple juice. Pour over chicken. Place pineapple rings over chicken and put pan in a 350 oven for 35-45 minutes.
