Dh wants us to start eating less meat. Partly due to the rising cost of beef and because its better for us.

Last night he made the best meal I've tasted in a long time! I wanted to post it, because it's just soo good!

Stuffed Manicotti
Manicotti shells
1pk cream cheese
1 head of broccoli
2 jars of alfredo sauce

Steam brocolli. Chop heads off and mix with cream cheese. Cook manicotti for 8-9 minutes. Stuff the manicottis with cream cheese mixture and cover with alfredo sauce. Bake until manicotti has finished cooking.

It was so good and so filling. Night before last he made us spanish rice, but instead of using hamburger, he put in 2 cans of black beans. It was delish as well.

I think I'm going to actually going to enjoy making the switch.
