and as soon as I saw this recipe I had to try it. My 10 yr old caught me making the cupcakes and she was horrified, but after bravely trying one, she's a fan. I made them gluten free and we all like the way they turned out.
1 1/2 c all purpose flour
1/4 c cocoa
1 c sugar
1/2 t salt
1 t baking soda
1 T white vinegar
1/3 c melted coconut oil
1 t vanilla
1 c water (or cool coffee)
1/4 c puréed cooked kale
Whisk dry ingredients and stir together with combined wet ingredients. Fill each muffin tin 3/4 full. Bake 15-18 minutes at 350 or until toothpick comes out clean. Allow to cool in pan for 5-10 minutes before removing.
My mini food processor didn't exactly purée the kale, it was more of a grind. But that worked.
